Apple Oat Cookies made with Rachel's Organic Oat mix

Try this favorite easy recipe made with Rachel's Apple Cinnamon Oats
Overnight Oats! These cookies are free of gluten, dairy or soy, but taste just like home and childhood and all the cozy things. Recipe below!⁠
1 cup Rachel’s Overnight Oats⁠
3 tbsp oat or cassava flour⁠
1/4 tsp salt⁠
1 tsp cinnamon⁠
2 tbsp melted coconut oil⁠
¼ cup creamy almond or peanut butter⁠
3 tbsp maple syrup⁠
3 tbsp coconut sugar or monkfruit⁠
1 tsp vanilla⁠
Preheat oven to 350 degrees fahrenheit and line a baking sheet with parchment. In a large bowl, whisk together the dry ingredients from the oats to cinnamon. In a small bowl, combine the wet ingredients from nut butter to vanilla. Pour the wet mixture over the dry, and stir with a spatula to combine (add a tbsp of water if needed). Form 1in balls of the dough, then slightly flatten onto the baking sheet. Bake for 10-12 minutes, then let cool before removing from baking sheet. Dig in!
