Apple Banana Baked Oats

Do you have a little more time on your hands to prep breakfast during quarantine?  Switch up your go to breakfast by baking Rachel’s Overnight Oats.  Baked Oats can be prepared and baked in just 50 minutes.  Whether baked in the morning or reheated from the night before, baked oats are a fun way to switch up your breakfast rotation.  These Apple Banana Baked Oats are a delicious way to start the morning and made with simple household ingredients!  The recipe yields 6 servings, making it perfect for meal prep or feeding the entire family.

 

Ingredients: 2 cups Rachel’s Overnight Oats – Apple Cinnamon flavor, 2 ½ cups non-dairy milk, 1 teaspoon cinnamon, 1 teaspoon vanilla, 2 bananas sliced, ¼ cup maple syrup, 2 tablespoons coconut oil (melted), pinch of sea salt, ½ teaspoon almond extract (optional)

  

Directions:

  1. Preheat your oven to 375°F
  2. Add Rachel’s Overnight Oats – Apple Cinnamon flavor, almond milk, vanilla, 1 banana sliced, melted coconut oil, maple syrup, a pinch of sea salt, and almond extract (optional) to a large bowl
  3. Mix the ingredients and pour into an 8x8 baking dish greased with coconut oil
  4. Use the remaining banana slices to top the oatmeal bake
  5. Bake for 40-45 minutes
  6. Let sit for 5-10 minutes to cool before serving
  7. Top your oatmeal bake with almond butter, extra cinnamon, cacao nibs, or more fruit if desired
